- 1/2 cup (125 ml) canned coconut milk
- 3/4 of a medium banana, peeled, chunked and frozen for 60 minutes
- 1 cup (250 ml) fresh pineapple chunks, frozen for 60 minutes
- fresh mint leaf, for garnish
In a food processor, combine all ingredients.
Process until smooth. Strain into a cocktail glass. garnish with a fresh mint leaf.
You can also add avocado, Greek yogurt, pineapple juice, lemon juice, oats.
