Baked Lemon Pudding Dessert Recipe

Makes 4-6 servings Ingredients: 4 oz (120 g) unsalted butter, 6 oz (180 g) caster (superfine) sugar, 4 eggs, 1 lemon, 3 tablespoons (45 ml) plain flour, 1 1/4 cups (310 ml) milk, 1 tablespoon icing sugar (powdered)

Instructions: Preheat your oven to 400 F (200 C) In a medium mixing bowl, combine the butter and caster sugar. Beat until light and fluffy. using another medium bowl, separate the eggs. Stir the egg yolks to the creamed mixture. Beat well.

Pell the lemon, then grate the rind and squeeze out the juice. Beat lemon rind and juice into creamed mixture. Gradually stir in the plain flour, then pour in the milk and mix well.

In a small bowl, beat egg whites until stiff, then carefully fold into the creamy lemon mixture. Place the batter in a 7-inch (18 cm) souffle dish, then sprinkle with icing sugar.

Arrange the dish in a roasting tin containing 1 inch (2.5 cm) hot water. Bake in the preheated oven for 40-50 minutes or until the pudding has risen and the top of dessert is golden. Serve hot.

Instructions

Preheat the oven to 400º F (200º C).

In a medium bowl, cream the butter and caster sugar until fluffy. Add egg yolks to the creamed mixture. Beat well.

Stir lemon rind into the mixture, then pour in the lemon juice. Beat well.

Gradually stir in the plain flour, pour in the milk. Stir again.

 In a small bowl, beat egg whites until stiff. Fold into the mixture.

Place in a greased souffle dish. Sprinkle with icing sugar. Arrange the dish in a roasting pan containing 1 inch of hot water.

Bake in the preheated oven for 40-50 minutes. Serve hot. Enjoy!
