Ingredients: 1 1/4 pounds potatoes, 2 large eggs, 1 tablespoon (15 ml) plain flour, salt and freshly ground black pepper, to taste, 4 tablespoons (60 ml cooking oil), chopped fresh parsley, for garnish
Instructions ( makes 4 servings): Peel the potatoes, then grate coarsely into a bowl filled with cold water. Using a colander, drain and squeeze dry in a cloth. Place into a medium dry bowl. In a small mixing bowl, beat the eggs.
Add beaten eggs to potatoes, then stir in the flour, season with salt and black pepper and mix well to combine. In a frying pan, heat a little of cooking oil until bubbled, then, working in batches, add 1/4 of the potato mixture. Flatten into a pancake and fry over medium heat for about 5 minutes or until edges are golden. Using a spatula, turn carefully and brown another side.
Remove cooked potato pancakes from the pan and transfer to a serving plate. Keep hot while the rest of the mixture is cooked. Sprinkle with chopped fresh parsley. Serve hot.
Place grated potatoes in a large dry bowl. beaten egg, flour, and seasonings.
Mix well and set aside.
In a frying pan, heat a little oil over high heat. Working in batches, add potato mixture to the hot oil and cook until golden brown. Flip and for a further 2-3 minutes.
Remove fried potato pancakes from the pan and transfer to a serving plate. Keep hot.
Sprinkle with chopped fresh parsley. Serve hot,
