Healthy Caesar Salad with Shrimp Recipe ( How to Prepare Garlic Croutons)

Ingredients: 8 slices French bread, 1 teaspoon (5 ml) olive oil, 1 clove garlic, peeled, pinch of salt

Instructions: Preheat the oven to 325 F (165 C). Using a pastry brush, brush both sides of french bread with olive oil. Cut peeled garlic in half, then rub it onto both sides of oiled bread. Generously sprinkle with salt, then cut bread into cubes and arrange in a baking sheet. Bake in the preheated oven until bread is crispy and golden brown, for about 10 minutes, stirring once or twice. Turn off the oven and remove baked croutons from it. Transfer in a large serving bowl.

How to Prepare Lemon-Pepper Grilled Shrimp)

Ingredients: 1 pound (480 g) large raw shrimp, peeled and deveined, 1 teaspoon (5 ml) olive oil, 1/4 teaspoon (1 ml) salt, 1/2 teaspoon (3 ml) freshly ground black pepper, 2 tablespoons (30 ml) freshly squeezed lemon juice

Instructions: Preheat your grill. In a large mixing bowl, combine shrimp and olive oil. Toss well. Sprinkle with salt and black pepper and toss again. grill in the preheated grill until cooked through, for about 2-3 minutes per side. remove grilled shrimp form the grill and transfer to a serving plate. Drizzle with lemon juice and set aside.

Ingredients

  • 1/4 cup (60 ml) pasteurized egg product
  • 1 clove garlic, peeled and minced
  • 4 tomatoes, sliced
  • 1 1/2 teaspoons (8 ml) anchovy paste
  • 1 teaspoon (5 ml) Dijon mustard
  • 1/4 teaspoon (1 ml) Worcestershire sauce
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • 3 tablespoons (45 ml) olive oil
  • 1/4 cup (60 ml) finely grated Parmesan cheese
  • salt and freshly ground black pepper, to taste
  • 8 cups (2 L) coarsely torn Romaine lettuce
  • 2 cups (500 ml) Garlic Croutons (see recipe above)
  • 1 pound (480 g) Lemon-Pepper Grilled Shrimp (see recipe above)

Instructions

In a small mixing bowl, combine pasteurized eggs,  anchovy paste, minced garlic, Dijon mustard, Worcestershire sauce and lemon juice. Whisk well. Stir in olive oil, whisking all the time. Sprinkle with Parmesan cheese and mix well. Season to taste with salt and black pepper.

In a large mixing bowl, combine the dressing and lettuce. Toss until lettuce is well coated. Add garlic croutons and tomatoes. Toss well to combine. Divide Caesar salad onto 4 plates.  Top with grilled shrimp and serve immediately.
