Preheat the oven to 325º F (160º C).
In a blender or food processor, combine all ingredients, except chicken wings. Blend well.
Place chicken wings in a large baking pan, then pour the blended sauce over. Turn wings over to coat on all sides.
Cover and set aside for at least 30 minutes.
Transfer marinated chicken wings to the preheated oven. Bake for 60 minutes, turning every 20 minutes.
Remove baked wings from the oven, and transfer to a serving plate. Serve on the bed of fresh lettuce with fresh vegetables. Scrap the sauce from the baking pan and transfer to the blender. Blend until sauce is smooth. Serve with baked wings.
