Ingredients

  • 1 pound (480 g) green beans, washed, trimmed and halved
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon (3 ml) salt
  • 2 cups (500 ml) fresh tomatoes, sliced
  • 1/2 cup (125 ml) grated Parmesan cheese

Instructions

Preheat the oven to 425º F (210º C).

Grease a 15x10x1-in. baking pan with nonstick cooking spray.

Place trimmed green beans in the greased pan.

In a small mixing bowl, combine olive oil, Italian seasoning, and salt. Mix well, then drizzle oil mixture over beans. Toss well to coat. Roast in preheated oven for 10 minutes.

Add sliced tomatoes to the pan. Roast until beans are crisp-tender and tomatoes are softened, for a further 4-6 minutes.

Remove roasted green beans with tomatoes from the oven. Transfer to a serving plate. Sprinkle with grated Parmesan. Serve hot.
