Ingredients

  • 1 pound (480 g) beef stewing meat, cubed
  • 1 medium white onion, peeled and diced
  • 3 medium potatoes, peeled and diced
  • 3 garlic cloves, peeled and minced
  • 4 medium tomatoes, diced
  • 2 cups 9500 ml) canned white beans, drained and rinsed
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon tomato puree
  • 1 cup (250 ml) beef stock
  • 2 tablespoons ground cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons paprika
  • 2 teaspoons dried oregano
  • salt and freshly ground black pepper, to taste

Instructions

Heat the olive in a large nonstick skillet over medium-high heat.

Add stewing meat, season with oregano, salt, and black pepper, then brown on both sides.

Add the onion, garlic, and tomato puree. Stir well.

Continue cooking, stirring occasionally, until the onion is softened slightly.

Remove the beef mixture from the skillet and transfer it to a 6-quart (6 L) slow cooker.

Add the remaining ingredients. Close the pot and cook on a low-heat setting for 5 hours.
