Instant Pot mashed Cauliflower Recipe
Alternatively, if you are not vegetarian, you can mash cooked cauliflower with grated Parmesan cheese, Greek yogurt, or butter.
Ingredients
- 1 head cauliflower, stemmed and leaves removed
- 1 cup (250 ml) vegetable stock
- 4 cloves garlic, peeled
- 6 sprigs fresh thyme
Instructions
In a 6-quart (6 L) instant pot, combine the vegetable stock, garlic, and thyme. Stir well.
Place the trivet on top, then cauliflower on trivet.
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 15 minutes.
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid.
Remove cooked cauliflower from the pressure cooker and transfer to another pot.
Mash with almonds and leeks.

Sounds delicious! How long Do you think it will keep in the refrigerator? I have a small household and I know 1 head of cauliflower will have leftovers.
