Ingredients

  • 1 package strudel leaves
  • 6 tart apples, peeled, cored and cut into thin slices
  • grated rind and the squeezed juice of 1 lemon
  • 1 cup (250 ml) seedless raisins
  • 1 cup (250 ml) chopped walnuts
  • 1 cup (250 ml) granulated sugar
  • 1 teaspoon (5 ml) ground cinnamon
  • 4 tablespoons (60 ml) unsalted butter, melted
  • 1/4 cup (60 ml) fine dry breadcrumbs, toasted

Instructions

In a medium mixing bowl, combine apple slices, lemon rind, and juice. Mix well. Add the raisins, walnuts, sugar, and ground cinnamon and mix well to combine. Set aside. Preheat the oven to 375º F (190º C).  Place a large damp paper towel on a table, then open the sheet of strudel leaves and place it on the cloth. Keep the remaining leaves covered to prevent drying. Lightly brush the strudel sheet with melted butter, then sprinkle with breadcrumbs. Repeat the same method with remaining sheets of strudel leaves, placing each ot the top of the last.

Spread the nearest short edge of strudel leaves with the apple mixture, making a strip about 3 inches (7.5 cm) wide.  Using a paper towel, loosely roll up the strudel and fold in the sides of the strudel. Place on a greased baking sheet and brush the top with melted butter.

Bake in the preheated oven until golden brown and toothpick inserted in the center of the strudel comes out clean, for about 25-30 minutes.
