Baked Hazelnut-Pear Cake Recipe
Makes 8-10 servings, Ingredients: 5 ripe pears, freshly squeezed juice of 1 lemon, 3/4 cup (80 ml) all-purpose flour, 3/4 teaspoon (4 ml) baking powder, 1/2 teaspoon (3 ml) salt, 3/4 cup (80 ml) finely ground hazelnuts, 2 cups (250 ml) sweet butter, at room temperature, 1 1/4 cups (310 ml) granulated sugar, 3 large eggs, 1 teaspoon (5 ml) vanilla extract
Instructions: Preheat the oven to 350 F (180 C). grease with the butter, then dust with flour a 10-inch (25 cm) springform cake pan.
Peel, core, then finely chop the pears. In a medium mixing bowl, combine chopped pears and half of the lemon juice. Toss well. set aside.
In a small mixing bowl, combine the flour, baking powder, and salt. Stir well. Stir in ground hazelnuts and set aside.
In a large mixing bowl, combine 12 tablespoons butter and 1 cups (250 ml) sugar. Mix until creamy and fluffy, then beat in the eggs, one at a time. Stir in the dry mixture, then the remaining lemon juice, chopped pears, and vanilla extract.
Sprinkle the batter with all but one tablespoon (15 ml) of the remaining sugar, then dot with remaining butter. Place the cake in the preheated oven and bake until golden brown or until a toothpick inserted in the center comes out clean, for about 70 minutes.

In another mixing bowl, combine 12 tablespoons butter and 1 cup of sugar. Mix until creamy and fluffy. beat in the eggs, one at a time. Stir in flour and nut mixture, then chopped pears, remaining lemon juice and vanilla extract.
Spread the batter in the pan, then sprinkle with all but one tablespoon of the remaining sugar and dot with remaining butter.
Place the cake in the preheated oven and bake until golden brown, for about 70 minutes. Serve warm.
