Ingredients

  • 1/2 pound bacon, cut into strips
  • 1 pound Vienne sausages, sliced
  • 1 medium yellow onion, peeled and diced
  • 2-3 cloves garlic, peeled and crushed
  • 3 cups (750 ml) chicken stock
  • 6 medium Yukon potatoes, peeled and chunked
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon red pepper flaked
  • 1 large carrot, peeled and chopped
  • chopped fresh parsley, for serving

Instructions

In a 6-quart (6 L0 electric instant pot, combine all ingredients, except sausages and bacon. Cover the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 10 minutes. Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Switch the cooker to saute mode. Stir in bacon and sausages. Continue cooking for a few minutes or until bacon and sausages are heated through. Ladle the soup into soup bowls. Sprinkle each bowl with chopped parsley. Serve hot.
