Ingredients

  • 2 large eggs, separated
  • 1/4 teaspoon of baking soda
  • 2 tablespoons (30 ml) plain Greek yogurt
  • 1/8 teaspoon kosher salt
  • nonstick cooking spray

Instructions

Preheat your air fryer to 400º F (200º C) for 5 minutes.

Meanwhile, in a large mixing bowl, combine egg whites and baking soda. Using an electric mixer, beat until stiff peak forms. Set aside.

In a small mixing bowl, combine egg yolks and Greek yogurt. Stir well.

Fold the yolk mixture and salt into the egg white mixture.

Dollop the mixture into 4 mounds on a parchment-lined baking sheet and coat with cooking spray. Spread each into a 4-inch (10 cm) round.

Place rounds in the air fryer basket.

Fry at 325º F (162º C) for 15 minutes, or until the top is golden brown.
