Ingredients:

1/2 head cauliflower, cut into bite-sized pieces (about 1.5 cups)

2 Tbsp olive oil + 2 tsp sesame oil or canola oil for cooking the cauliflower bites

1/4 cup finely grated Parmesan cheese

1/2 tsp salt

1/4 tsp black pepper

2 Tbsp minced fresh parsley

1 Tbsp minced fresh chives

1 1/4 cups panko bread crumbs

Directions: Set up your air fryer to heat at 400 degrees F. In a medium-sized bowl, toss the cauliflower with olive oil, salt, and pepper.

Place into the air fryer basket and cook until golden brown, about 20 minutes. Meanwhile, in a separate bowl with a fork, stir together the Parmesan cheese, parsley, and chives.

Remove the cauliflower from the basket and dip it into the grated cheese mixture before returning it to the fryer. Top each piece of cauliflower with breadcrumbs and cook for four to five minutes until cauliflower is golden brown and heated through. Serve with spicy mayonnaise.
