What is it Casarecce pasta? Cassarecce, also known as “casareccia”, is short pasta noodles with curled edges and a groove down in the middle. This pasta is original from South Italy (Sicily). In this region, this pasta served with what is known as Sicilian pesto. You can serve Cassarecce pasta with seafood (mussels, clams, shrimp) or swordfish.

Broccoli Cassarecce Pasta Salad Recipe

Ingredients

  • 1 package uncooked Cassarecce pasta
  • 3 cups (750 ml) broccoli florets
  • 3 tablespoons (45 ml) extra-virgin olive oil
  • 3 garlic cloves, peeled and minced
  • coarse sea salt
  • 2 large tomatoes, sliced
  • chopped fresh parsley
  • your favorite sauce

Instructions

Pour the water into a large pan. Bring to a boil over medium-high heat.

While boiling, in a small saucepan, heat the olive oil over medium-low heat. Add minced garlic and saute, stirring occasionally, until golden. Remove the saucepan from the heat and set aside.

Add pasta to boiling water and cook according to cooking instructions until pasta is al-dente. Remove the pan from the heat and, using a colander, strain it. Put cooked pasta to the pan with garlic and oil.

In the same saucepan, cover the broccoli with the water and bring to a boil over medium-high heat. Boil for 1 minute, then strain and transfer to cold water to stop a cooking process. Strain cooked broccoli then stir into cooked pasta, garlic, and oil.

Add sliced tomatoes, chopped parsley, and your favorite sauce. Mix well.
