Ingredients

  • 1 large yellow onion, peeled and diced
  • 1 tablespoon olive oil
  • 2 large boneless and skinless chicken breasts, sliced
  • 1 cup diced carrots
  • 1 tablespoon parsley
  • 1 bay leaf
  • 6 cups (1.5 L0 chicken broth
  • 4 oz (120 g) egg noodles
  • salt and freshly ground black pepper, to taste

Instructions

Heat the olive oil in an instant pot turned to saute mode. Add onion and cook, stirring occasionally, until softened.

Add the remaining ingredients, except noodles. Mix well.

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 10 minutes.

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Remove cooked chicken from the pot and transfer to a large plate.

Switch the cooker to saute mode. Once the broth begins to boil, add the noodles. Simmer, stirring occasionally, for 6-8 minutes, or noodles are tender.

Return the chicken to the instant pot. Stir well to combine. Season with salt and black pepper, to taste.

Serve hot.
