Fried Cauliflower Fritters Recipe
Ingredients: 1 large cauliflower, a pinch of salt, 1 large egg, 1 egg white, 2 oz (60 g) all-purpose flour,1/4 pound (120 g) dried breadcrumbs, cooking oil for frying, parmesan cheese, fresh parsley
Instructions (see the short version below) Wash the cauliflower under cold running water, then trim it and divide into 25-30 florets. Bring a medium saucepan filled with salted water to a boil over medium-high heat. Add trimmed cauliflower florets to boiling water and cook for 7-10 minutes or until just tender. Remove the saucepan from the heat. Using a colander, drain cooked cauliflower, set aside and allow to cool.
In a medium mixing bowl, beat together egg, egg white, and a pinch of salt until frothy. Prepare two shallow dishes-one with all-purpose flour and second with breadcrumbs. Dip each cooked floret into flour first, then into the egg mixture, then roll in breadcrumbs until well coated.
In a deep-fryer, heat cooking oil to 320 F (160 C) Once the oil is hot, deep fry cauliflower until golden brown and crisp. Using a slotted spoon, carefully remove fried florets from the pan and transfer to paper towels. Drain, then sprinkle with salt, grated parmesan cheese, and chopped fresh parsley. Serve hot.
