Ingredients

  • 2 cups almond flour
  • 1/2 cup vanilla protein powder
  • 2 tablespoons monkfruit sweetener
  • 2½ teaspoons baking powder
  • 2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup (60 ml) sour cream
  • 1/4 cup (60 ml) hot water
  • For Chocolate Glaze:
  • 7 oz (210 g) ChockZero chocolate baking chips (white, milk, or dark)
  • 1 tablespoon coconut oil

Instructions

In a medium mixing bowl, combine all dry ingredients. Stir well.

In another mixing bowl, combine all wet ingredients. Mix until well combined.

Add dry mixture to the wet mixture. Beat until combined.

Grease donuts molds with nonstick cooking spray.  Grab a handful of batter and press it into greased molds.

Arrange a trivet into the liner of  electric instant pot. Pour 1 cup (250 ml) water into the pot.

Place filled molds on top of the trivet. Close the cooker and lock the lid.

Set the timer to cook at high pressure. Set the timer to cook for 12 minutes.

Using the Natural Release method, bring pressure to normal. Carefully unlock and open the lid.

Remove cooked donuts form the pressure cooker and transfer to a wire rack. Allow to cool.

In a small bowl, melt chocolate chips and coconut oil in a microwave. Dip cooled donuts in the chocolate glaze, then top with sugar-free sprinkles.
