Ingredients
- 6 hard-cooked eggs, shelled
- 1/4 cup (60 ml) guacamole dip
- 1 teaspoon (5 ml) freshly squeezed lime juice
- 1 tablespoon (15 ml) minced fresh cilantro
- 1/4 teaspoon (1 ml) salt
- fried bacon, crumbled
- paprika
Instructions
Cut shelled eggs in half lengthwise. Remove yolks, then set egg whites aside.
In a small mixing bowl, mash egg yolks with a fork. Stir in the guacamole dip, lime juice, and chopped fresh cilantro. Sprinkle with salt and paprika. Stuff the guacamole mixture into egg whites.
Garnish with crumbled bacon. Wrap with a plastic wrap and refrigerate until serving.
