Variations: Saffron Couscous: Heat the butter and olive in an electric instant pot turned to the sauté mode. Add couscous and mix well. Stir in 16 crushed saffron threads, 3½ cups water, and salt.
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 5 minutes.
Using the Quick Release method, bring pressure to normal. Unlock and open the lid. Transfer cooked couscous to a serving plate.
In a sauté pan, heat 2 teaspoons of olive oil over medium-high heat. Add 1/2 cup slivered blanched almonds and cook, stirring, until just turning golden.
Remove from the pan and drain on paper towels. Sprinkle over the cooked couscous. Enjoy!

- 2 tablespoons unsalted butter
