Ingredients
- 1 medium eggplant, quartered and cut into 1/2-inch (1.2 cm) thick slices
- 2 tablespoons (30 ml) vegetable oil
- kosher salt and freshly ground black pepper, to taste
- 1 garlic cove, peeled and grated
Instructions
Preheat your air fryer to 400 º F (200º C) for 5 minutes. In a large mixing bowl, combine eggplant slices, vegetable oil, salt, and black pepper.
Toss well.
Arrange the eggplant slices in the air fryer basket.
Fry at 400º F (200º C) for about 15 minutes, or until golden brown, shaking the basket 2-3 times during the cooking.
Serve hot.
