Ingredients
- 1 pound (480 g) ground beef
- 1 bay leaf
- 1/3 cup diced potatoes
- 1 yellow onion, peeled and diced
- 1 carrot, peeled and chopped
- 4 cloves garlic, peeled and minced
- 1 tablespoon paprika
- 1 teaspoon Italian seasoning
- 1/4 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1¼ teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 3 red bell pepper, cored and chopped
- 4½ cups (11125 ml) low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 14 oz (420 ml) can tomato sauce
Instructions
Cook ground beef, stirring occasionally, for 5 minutes, in an electric instant pot turned to saute mode.
add garlic, bay leaf, and spices. Cook, stirring, for a further 30 seconds. Stir in chopped bell peppers, carrots, and potatoes.
Pour in the beef broth and Worcestershire sauce. Mix well.
Add tomato sauce (do not stir).
Close the pot and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 4 minutes.
Using the natural Release method, bring pressure to normal. Carefully unlock and open the lid.
Mix well before serving. Serve with a dollop of sour cream.
