Ingredients
- 2 tablespoons (30 ml) unsalted butter, plus more for greasing
- 1/2 cup (125 ml) milk
- 1 cups tapioca flour
- teaspoon salt
- 1 large egg, beaten
- 2/3 cup (160 g) finely grated Asiago cheese
Instructions
Place the butter in a small saucepan. Pour in the milk. Bring to a boil, stirring.
Turn off the heat and stir in the tapioca flour and salt to form a soft dough.
Remove the dough from the heat and transfer to a large bowl.
Wrap the bowl in a plastic wrap and set aside for 15 minutes.
Whisk the egg, using a hand mixer, for 2 minutes or until a sanity dough form.
Fold the grated cheese in the dough.
Cover the bowl with a plastic wrap and set aside for a further 10 minutes.
Grease a cake pan with butter.
Scoop 2 tablespoons of the dough into the pan (make 12 balls).
Place the cake pan in the air fryer.
Working in batches, bake at 375 F (180 C) for 12 minutes, or until cheese balls are golden and fluffy, flipping them halfway through the cooking time.

Is tapioca flour the only option?
Use 3/4 cup cornstarch, if you don’t like tapioca flour.
I have some Brazilian cheese bites which I purchased frozen from Costco. Any suggestions on what temp and time to cook these in the air fryer?
How do and for how long do you store these?
Hi, You can store them in a refrigerator for up to 2 days. Just wrap the baked bread in linens to trap the moisture and store it in a thermal bag if available. Regards
