Instant pot sweet and spicy cauliflower head. I love making this Instant Pot roasted cauliflower recipe because it has some kick from the hot sauce and you can top it with anything. It’s healthy, gluten-free, vegan, and great for meal prep.

Cauliflower always goes well with my standard cooking method of roasting it on a sheet pan. I enjoy the taste and find it to be easy to cook given its simple preparation process.
When I roast cauliflower and other vegetables, I just toss them with olive oil, any sauce, or seasoning that suits me and put them in the oven. But honestly, I just tried cooking a whole cauliflower head in my Instant Pot, and no one knew the difference! Roasting in an oven is a long process, which can get hectic at times. Whereas with this method the cauliflower turns out really tender, with no need for constant supervision and no mess when you’re done!
How to Prepare Sweet and Spicy Cauliflower Head?
In order to prepare cauliflower for cooking, you should start by removing any green leaves from the head of the cauliflower and then wash it under a running tap.
To make the marinade, whisk together honey or maple syrup with olive oil and some other sauces. Then add some black pepper and salt.
Please add ½ cup of water to the bottom of the Instant pot and place a trivet at the bottom. Now, put the cauliflower head onto that trivet.
Use a brush to apply the marinade, covering as much of the cauliflower head as possible.
Close the pot and lock the lid. High pressure takes 1-8 minutes, but bear in mind that the size and freshness of your cauliflower will affect this.
If your cauliflower is ready and the cooker finishes, you should quickly release the steam and carefully remove the lid. Garnish with chopped parsley leaves and add some lemon juice.

Ingredients
- 1 cauliflower head, washed
- To make the marinade:
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 teaspoons soy sauce
- 1 tablespoon ketchup
- 1½ tablespoons hot sauce
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- chopped fresh parsley, for garnish
- freshly squeezed juice of 1/2 lemon
Instructions
In a small mixing bowl, combine all marinade ingredients. Mix until well combined.
Brush the marinade over the washed cauliflower until well coated.
Pour 1/2 cup (125 ml) of water into the bottom of the instant pot. Place the cauliflower head on a trivet inside of pressure cooker.
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 1-8 minutes (If you only have a small cauliflower head use 1 minute). For a medium cauliflower 4 minutes might be enough.
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid.
Remove cooked cauliflower from the cooker. Glaze one more time and broil for 5-10 minutes.
Sprinkle with chopped parsley and lemon juice. Serve immediately.
